Greetings Foodtopia fans! Last night the Eating Asheville team was lucky enough to participate in opening night of the long anticipated AUX Bar, located on Lexington Avenue downtown. Aux brings together two Asheville food scene superstars; Mike Moore of Blind Pig Supper Club and Seven Sows as well as Steve Goff, former chef of King James Public House.
Many of Asheville’s best chefs are known for creative uses of locally produced fresh ingredients, and we think both of these talented guys are perfect examples of the kind of cooking that put Asheville on the culinary map. Often times new restaurants have a hard time getting on their feet. None of that was evident in the case of Aux, as we enjoyed several tasty courses including roasted bone marrow tartare, crispy brussel sprouts, the house “animal burger” featuring HNG beef and pork, and NC Oysters with delectable toppings like apple chow chow and breadcrumbs with butter and herbs.
Equally as Impressive as the food menu was the drink experience. The bar program at Aux is run by Asheville food scene veteran Jen Gordon. The menu boasts complex cocktails alongside fun classics like jello shots and pickle backs. We were particularly impressed by the wine menu and delicious Old Fashioneds.
As food tour guides, we love exploring new Asheville restaurants and are always excited when a new player comes on board downtown’s food scene. But we were particularly blown away by Aux Bar and are so excited to see what the future has in store for this exciting new establishment!
