Greetings enthusiastic eaters, if you want to escape the madness downtown during the upcoming Asheville New Year’s Eve and get to check out the talents of the hottest new addition to the ranks of chefs here in Foodtopia, then Buffalo Nickel is the place for you this Saturday night. If you hadn’t heard, Lynn and Rob Foster recently recruited chef John Bausone to take over the helm at their classy West Asheville restaurant and bar. Yes, classy isn’t the first adjective conjured up by many of the joints that line Haywood Road, but Buffalo Nickel stands out on the west side strip, and offers a well designed, multi-faceted space along with one of the most hospitable staffs in town. Now they’ve added chef Bausone to the mix. After working as a young chef at the Biltmore Estate among other spots in Asheville, Bausone migrated to major culinary scenes in Cleveland and Portland to earn his chops. After spending several years in these cities–most notably at Courtney Sproule’s Din Din Supper Club in Portland and The Beachland Ballroom and Grovewood Tavern in Cleveland–the Fosters happened to be looking for a new executive chef at the time Bausone was thinking of returning to Asheville. Well he’s here, and if you haven’t visited Buffalo Nickel recently, it is an utterly new experience. This Asheville New Year’s Eve gives you the perfect opportunity to do so. Like many chefs, Bausone’s presence in Asheville has largely to do with the preeminence of ingredients available here in Western North Carolina, and this menu is a tour de force of seasonal Appalachian ingredients.
